My mom always told me the way to a man’s heart was through his stomach. Now, this may not be true for all men, but it’s true for my man. Back in 1996 while on a music tour in Jamaica, I made a less-than-gourmet meal for the tour members (Biscuits and Gravy, anyone?). Guess who happened to enjoy eating this Southern Soul Food? None other than the director of the tour, who just happend to become my husband a few years later!
Not only was food the way to his heart, he realizes cooking is my creative outlet. And I am thankful that he will eat whatever I make. This makes it fun to push the culinary envelope and try new recipes from all over the world. And while we do enjoy a wide variety of cuisines, nothing beats a fresh salad made with ingredients that make your tastebuds do a happy dance.
This morning, I realized I had some ingredients in the refrigerator that needed to be used up. So, I took a little bit of this and a smidge of that and came up with this refreshing salad. To make it a bit more substantial, consider adding thinly sliced, grilled steak. Hope you enjoy!
Pear and Feta Salad
- 3 Tbs. Tarragon vinegar
- 1 tbs. Dijon mustard
- 2 tsp. minced garlic
- 2 tsp. of honey
- 1 tsp. of Herbs de Provence
- 1/4 cup olive oil
- salt and pepper
- 1 bag mixed greens
- 1 large ripe pear, halved, cored, and thinly sliced
- 1/2 cup crumbled feta
- 1/2 cup almond, sliced
- 1/4 cup of craisins
- 1/2-1 cup of homemade garlic croutons
Whisk dressing ingredients together in a bottom of salad bowl. Then, add salt and pepper to taste. Add greens, tossing to coat. Top with pear, feta, almonds, croutons and craisins. Gently tossing to combine.
Makes aprx. 2 large entrée servings or 4 small plate servings.
