[Recipe] Farfalle, Sausage and Kale (A one dish meal)

Farfalle, Sausage and Kale

  • 16 ounces farfalle (bow tie pasta), cooked according to package directions
  • 1 T of olive oil
  • 1 medium onion, chopped
  • 1 lb of Italian sausage, crumbled or smoked sausage , sliced
    (**I used a smoked sausage w/ jalapeño & monterey jack cheese.)
  • 4 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1- 1 1/2 cups of reserved pasta water
  • 1 (16-ounce) package fresh kale
  • 1/4 cup of feta cheese
  • salt and pepper, to taste
  • 2 T of toasted pine nuts,  optional

Cook pasta according to directions and drain. Reserve 1-1/2 cups of pasta water. While pasta is cooking, place olive oil in a large pan and heat over medium-high heat. Add onion, cooking until just caramelized. Turn heat down to medium. Add sausage, garlic and sun-dried tomatoes. Cook until sausage is done. (If using smoked sausage, it will just need to be heated through.)  Add 1/2 of kale and 1 cup of water. Allow kale to just wilt, which takes only about two to three minutes. Add the remaining kale and water. Allow to just wilt. Season to taste with salt and pepper. In a large bowl, pour pasta and kale mixture. Stir together until mixed. Top with feta cheese and pine nuts. (**If using Italian sausage, consider adding a bit of crushed red pepper for flakes to the dish!)
