Meals for a Month: February

During 2012, one of my goals is to plan “Meals for a Month”.  Call me crazy, but over the course of the last year, I’ve discovered for me, personally, it’s much easier and less time-consuming to menu plan for a month (or more).  Meal planning is fun for me, and the task only takes about an hour or so from start to finish. I do my best to keep my pantry and freezer stocked with healthful ingredients, purchased at their stockpile price, so I usually have all that I need to plan a month’s worth of meals. To round out the each meal, I’ll make weekly purchases of fresh fruits, vegetables and dairy items from local stores, produce co-ops and the occasional run to Costco. So, we will see how this goes.

(Freeze leftovers for lunches)

14. Thai Chicken Curry, Jasmine Rice and Asian Cole Slaw

15. Crock Pot Lentil Chili & Steamed Brown Rice
(Freeze leftovers for lunches)

16. Sandwiches & Veggie Tray
(Defrost chicken for tomorrow) 

17. Baked Spicy Curry Masala Chicken Drumsticks, Whole Grain Pilaf,  Sauteed Vegetables
(Defrost chicken for soup. Soak beans for hummus.)

18.Spicy Egyptian and Lentil Soup,   30 Minute Rolls, and Carrot Sticks with Homemade Hummus
(Cook chicken in crock pot overnight.)

19. Homemade Chicken Soup and Biscuits

20. Chicken Fajita Salad
(Defrost ham and soak beans.)

21. Ham and White Beans with Cornbread Muffins

23. Black-Eyed Peas and Cornbread
(Defrost pork roast) 

24. Pork Roast, Crispy Roasted Potatoes, and Green Beans

25. Breakfast for Dinner

26. Italian Sausage and Roasted Red Pepper Lentil Stew  with Crackers
(Soak beans for tomorrow. Defrost chicken and steak.)

27. Steak and Chicken Tacos, Mexican Rice, Homemade Refried Beans & Mexican Street Salad

28. Dinner out/Attending Friend’s Church Service

29. Chicken and Dumplings and Southern Green Beans
