Menu Plan Monday: June 20-June 26

We are leaving for vacation in a few days (YEA!), so I am trying to clear out the fridge. Thus, I am preparing meals using the ingredients I have on hand. It’s making for some interesting creative meals. 🙂


Pasta Carbonara  from The Pioneer Woman.
Basically, I am using her recipe, but making a few modifications/additions. I am adding diced tomatoes because I need to use them. As well, I am adding a touch of cream to the egg mixture, just to make it that more delicious and rich!


Kids: Hotdogs, Mac ‘N Cheese, Apple Slices
Parents: Salmon Burgers with Spicy Caper Mayo, Carrots and Hummus (if the kids don’t eat it all! 🙂 )


Breakfast for Dinner: Biscuits and Egg Gravy with Orange Slices


Homemade Beef and Vegetable Soup (from the freezer) and Southern Style Cornbread




Jada’s Jambalaya and Green Salad
