Menu Plan Monday: April a Month of Meals w/ updates

This monthly meal planning thing is working out nicely. While I have a plan, I have the freedom to change things, as needed! And, trust me, there have been a few changes. All good, though!

Since I baked a ham on Sunday, I’ll be making soup sometime this week, which my husband is delighted about. As well, I can’t wait to try the “African Peanut Soup”. My husband and I have a date on Saturday night, which I am really looking forward to!

24. Easter Sunday: Tortellini w/ Butternut Squash & Crab Sauce, Sauteed Veggies and Salad

Menu change: Baked Ham, Rice/Gravy, Roasted Balsamic Veggies (Asparagus, Broccoli, Purple Onion, Carrots and Garlic!)

25. Dinner: Beef Tostadas, Ranch Style Beans, Homemade Pico de Gallo

Rescheduled: D: Parent’s DATE: Out-to-eat??? Terra Cotta Red??? 

26. Breakfast for Dinner: Bacon, Eggs and Just As Good As Popeye’s Biscuits

Bean and Ham Soup (using Ham Bone from Sunday. YUM!)

28. Crock pot: African Inspired Peanut Soup

30. Breakfast: Biscuits and Egg Gravy with Just as Good as Popeye’s Biscuits
Dinner: Parent’s Date Night 🙂
