Couscous with Caramelized Onions and Sun-Dried Tomatoes
- 1 cup of couscous
- 2 cups of chicken broth
- 1 large onion sliced into rings (yellow or white)
- 1/4 cup of sun-dried tomatoes, roughly chopped
- salt and pepper, to taste
- 2 t of Italian Seasonings
- 2 T of Olive Oil
Directions: Heat olive oil in a skillet on a med.-high heat. Add onions and cook on med-low heat. Stirring as needing. Cook until they reach a caramelized color, which is aprx. 15-20 minutes. Add sun-dried tomatoes, mix into onions. Add seasonings. Add chicken broth, bring to a boil. Pour in couscous. Stir. Cover and turn off heat. Couscous will be ready in less than five minutes. Uncover and stir, combining all ingredients. Add additional seasonings, as needed.
This is a tasty side dish, which is so good with a variety of fish entrees, as well as stuffed into a pita with grilled chicken.
