Menu Plan Monday: Oct. 18-Oct. 24

A few weeks ago, a friend shared a stack of cooking magazines with me. Okay, for me, that is like giving a kid a big ole bag of candy! I could sit for hours, and hours, and hours looking through all the recipes, reading the articles and dreaming of how all the delicious dishes would taste. While my husband wonders, “Are you ever going to cook any of them?” 🙂 Yet, this week, I am!

One of the magazines was Taste of Home’s Simple and Delicious (March/April 2006). This week, I am cooking Balsamic Asparagus (pg. 10), Cashew Pea Salad (pg. 14) and Parmesan Orzo (pg. 19).

There are so many delicious recipes in this magazine, especially quick and easy desserts. Definitely will have to test a few later this month, specifically the Almond Coconut Bars (pg. 50). How can chocolate, coconut and sweetened condensed milk NOT be good? I mean, REALLY!?

Monday: Tilapia Italiano with Parmesan Orzo

Tuesday: Uzbekistani carrot rice (Basically, this is just another version of chicken and rice.) with Balsamic Asparagus.

Wednesday: Crock Pot Soup

Thursday: Leftovers

Friday: Freezer Meal: Lentil Soup

Saturday: Breakfast for Dinner: Pumpkin Pancakes and Scrambled Eggs

Sunday: Shrimp Stir Fry, Brown Rice, and Cashew Pea Salad
