Fall is in the air! I love soups and stews, casseroles and curries. Not to mention enjoying Pumpkin Pancakes, Pumpkin Loaf with lots of butter and a steaming, hot Pumpkin Latte. All of these treats remind me of Fall, as well as cooler temperatures, changing colors of the leaves and rain (at least in this area of the country). This weekend, I scoured magazines, the internet and cookbooks for Autumn-esque recipes, even asking my Facebook friends for their most favorite soup.
Family meals are important to our family. We don’t always have dinner together, sometimes it breakfast or lunch. Regardless of which meal, we always make time to sit down to at least one meal a day together. For us, it helps with the rhythm of our lives, not to mention just a time to connect with one another.
Tuesday-Thursday evenings are work nights, either for my husband or myself. Freezer meals, the pressure cooker, or the crock pot come in handy, allowing us the opportunity to enjoy a home cooked meal together. This week, the crock pot will get a lot of use, as we are having soup three nights! I like to make huge batches, in order to freeze additional servings for lunches, or another meal on a crazy-busy day.
Monday: Maple Glazed Pork Chops, Pumpkin Polenta and Sauteed Zucchini
Tuesday: Italian Sausage and Roasted Red Pepper Lentil Stew with Garlic and Herb Flatbread
Wednesday: Taco Soup with Toppings (grated cheese, olives, sour cream, green onions) and Crackers
Thursday: Breakfast for Dinner (make up a large batch of waffles, freeze and toast to serve)
Saturday: Pork Green Chili with Hatch-Roasted Chilies from Colorado and Homemade Corn Tortillas
Sunday: Jada’s Jambalaya, Green Beans and Tossed Green Salad
