Menu Plan Monday: August 9-August 23, 2010

It’s an exciting week for our family. It’s Countdown Week, anticipating Auntie Cheryl, Uncle Aaron and the “Z-Man’s” visit. We are anxiously awaiting Friday morning, when their flight from Denver arrives in Seattle.

Since we have guests coming to visit, I won’t be posting as much. You will notice there are two weeks worth of menus. This just allows me to have a plan (even if I don’t follow it) when our guests are here. I have included some of our favorite go-to meals, such as Lasagna, Shrimp Ettouffee, Jambalaya and Taco Soup. All of which are great made ahead and reheated.

Monday: Minestrone Soup(page 48-49 from $3 Meals by Ellen Brown) and Salad

Tuesday: Breakfast for Dinner (Soaked Oatmeal Pancakes and Scrambled Eggs)

Wednesday: : Creole Fish (page 70-71 of $3 Meals by Ellen Brown), Couscous and Corn Sucotash

Thursday: Leftovers

Friday: Sweet and Spicy Baked Chicken, Cilantro Rice, Sauteed Sugar Snap Peas and Glazed Sesame Carrots

Saturday: Shrimp Ettouffee with Brown Rice and Veggie Tray

Sunday: Crockpot Taco Soup

Monday: Leftovers

Tuesday: Lasagna (From the freezer, Costco’s is really good!) and Green Salad

Wednesday: Sloppy Joes (From the freezer, I made extra the last time we had this meal.), Carrots and Celery with dip, Spicy Potato Wedges

Thursday: Jambalaya and Green Salad

Friday: Dad’s Dinner Delight, since Jon will be cooking.

Saturday: Leftovers

Sunday: Roast and Vegetables in the Crockpot
