Menu Plan Monday (a day late): July 26-Aug. 1

Nothing super-exciting on the menu this week. It has been rather hot, to the point I not only have no desire to cook, I have no desire to eat. Our grill is getting used a lot these days! So thankful for it.

Something that is exciting, well exciting for me, a foodie, is I received an electric pressure cooker for my birthday. So excited to use it! It will be making an appearance in the menu plan in the coming weeks, that’s for sure! Can’t wait to make yummy, comfort foods in the Fall and Winter, such as roasts and stews, that taste like they have been simmering for hours.

Summertime brings gorgeous weather, gardens, fresh fruits and vegetables. There are so many farmer’s markets and stands, as well as fresh and local produce in many of the grocery stores. Today, after meeting friends at the “Regal Family Film Festival” , the kids and I ran into the Asian market in Lynwood, right across from Alderwood Mall. It is called “H Mart”. They have a huge selection of fruits and vegetables, some of which I am familiar and others I can’t wait to try! As well, their prices are outstanding. Get this: They have a nice selection of organic vegetables, too!

I am like a kid in a candy store when we go there. It is so much fun to see all of the Asian cooking ingredients, as well as to bring home some tasty treats. Today, we got ingredients to make Pico de Gallo, fresh basil for Marinara Sauce and Pizza Margherita, as well as some Asian sodas for the kids. These are huge treats for the kids. We were first introduced to these by good friends from Colorado, who adopted two precious kiddos from China, a son and a daughter. Although, we are not big soda drinkers in our house, these are such fun as an occasional treat! Today, Jadon got pineapple and Jamison got strawberry. They even had lychee fruit soda!

Monday: Soup and Salad (I made Vegetable Soup and served it with chopped chicken on top. The soup I made is great hot or cold.)

Tuesday: Sloppy Joes, Spicy Potato Wedges, Calico Beans, Pico de Gallo/Chips

Wednesday: Grilled Pizza Margherita.

Thursday: Leftovers

Friday: Dinner with friends

Saturday: Dinner with the Youth Group from our church. (They are on a retreat and various folks from our church are bringing in meals for them to eat.)

Sunday: Lunch on the Grill, Salad and Fruit. (This is an exciting day for us because we get to see friends, who live in the UK that we haven’t seen in almost eight years!)
