Menu Plan Monday 4/5

What a great Easter! Saturday night, we attended a friend’s church service, which was so nice. On Sunday morning, we were up bright and early for our church’s worship services. Afterwards, we had an all-church brunch that was amazing! So many good things to eat, even Strawberry Shortcake! Yum! We came home and crashed for most of the afternoon,  playing games with the kids, napping and watching re-runs of “The Partridge Family” on Hulu. (Can you even believe the kids LOVE the show?!)

Although we didn’t have a traditional or formal Easter meal, I did purchase a ham, which will make an appearance on the menu this week. In our Bountiful Basket produce surprise, we received asparagus, zucchini, mango and other yummy vegetables and fruits. It has become a game with our kids to see if they can guess what surprises will be in our co-op basket. While they enjoy their sweet treats, they love their fruits and veggies. For this, I am thankful!

Monday-Leftover Homemade Chicken and Noodle Soup

Tuesday-Ham, Garlic Mashed Potatoes and Asparagus

Wednesday-Breakfast for Dinner/Whole Grain Pancakes with Mixed Berry Syrup and Scrambled Eggs

Thursday-Sow-Cooked Beans with Hamhock and Cornbread

Friday-Homemade Meat Sauce and Whole Grain Pasta with “Monkey Plate” (In our home, this is a veggie platter served with hummus and ranch dips.)
