Dinner: Plan B

According to Menu Plan Monday, tonight, we were to have feasted upon Pinto Beans, Rice and Cornbread. However, last night, as I was organizing the freezer, I punctured a package of steaks, leftover from our amazing Valentine’s Day Dinner. So, I quickly went into thinking of a “Plan B.” As soon as Jon took the first bite, I knew “Plan B” was a hit.

This morning, after the steaks were defrosted, I marinated them in a mixture of teriyaki sauce and Ginger Vinaigrette. Jon grilled them up tonight and they were delish, served with a side of fresh pineapple

To accompany the steaks, in olive oil, I sauteed some diced zucchini and yellow bell pepper. Added one can of vegetable broth, seasoned with salt, pepper and ground ginger, and allowed it to boil. Then, added about one cup of couscous. After it was cooked, I stirred in diced tomatoes, green onion, cilantro, salt and pepper.  So good!

Sometimes, “Plan B” turns out to be better than the original plan. It is all about going with the flow and using what you have to create a great culinary creation for your family and friends to enjoy!
