Oops, totally forgot about Meal Plan Monday on Monday!
- Monday-Leftovers from our scrumptious meal on Sunday night!
- Tuesday-Whole Wheat Spaghetti with meat sauce (I cook a large amount of extra lean ground beef and freeze flat in bags. This makes dinner so easy. For the sauce, I used some of the leftover roasted tomatoes that I had stored in olive oil in the fridge, as well as a can of tomato sauce. To boost the veggies, I added a bag of matchstick carrots/cabbage/broccoli. The kids love spaghetti, and I love it that they are getting extra veggies!)
- Wednesday–White Chili or Corn and Green Chili Chowder (I can’t decide between the two, so I might combine them. I will, however, be using the crockpot.)
Friday-Chicken Curry with Rice and Homemade Roti bread.
