Meal Plan Monday (a couple days late)

Oops, totally forgot about Meal Plan Monday on Monday!

  • Monday-Leftovers from our scrumptious meal on Sunday night!
  • Tuesday-Whole Wheat Spaghetti with meat sauce (I cook a large amount of extra lean ground beef and freeze flat in bags. This makes dinner so easy. For the sauce, I used some of the leftover roasted tomatoes that I had stored in olive oil in the fridge, as well as a can of tomato sauce. To boost the veggies, I added a bag of matchstick carrots/cabbage/broccoli. The kids love spaghetti, and I love it that they are getting extra veggies!)
  • Thursday-Leftovers
  • Friday-Chicken Curry with Rice and Homemade Roti bread.
  • Saturday-Broccoli and Rice Casserole with Roasted Chicken
